A Week of Feasts

I don't have much time to write.  I had to spend my writing time taking my Lent pictures and uploading them.  So I will not be reviewing them like I have been doing- I guess I am saving that for a HUGE post next week or do an extra post tomorrow.  But this week, we had St. Patrick's Day (March 17) and St. Joseph's Day (March 19).  I couldn't believe I only had one day to recover between feasts and on a week day no less!  So for the first time since the beginning of Lent I did a whole lot of cooking.  It will be tough to pick a favorite recipe but I think it was the zeppoles (more on that later).

First our simple Saint Patrick's Day meal- corned beef, garlic mashed potatoes, Irish soda bread, and cabbage and carrots in cheese sauce.

Second, until this year I was not aware of St. Joseph's Day.  I did a little research and discovered it was in honor of Jesus' earthly father.  There is more to it, but I gathered the necessary food items.  The basic symbolism is breadcrumbs to represent sawdust as Joseph was a carpenter.  I kept it very simple because I didn't really know what I was doing, but I ended up making easy breadcrumb spaghetti, spinach salad with Italian dressing, crescent rolls and zeppoles.  Zeppoles are Italian doughnut holes made with ricotta.  I figure I was born in Italy so I am basically Italian- should be easy!  Turns out- they ARE!  and they are delicious!  I used this recipe.  I am SO doing this again next year, but I need to share the extra with neighbors because I ate all the rest this morning.

I am so tired from all the cooking and cleaning.  I might do an extra post tomorrow because I have so much more to say.  I hope you all are feasting in your homes with love and simple food.  What did you do for Saint Patrick's Day?  Oh and Happy First Day of Spring- so excited for Spring Break next week!!
